Do you have a sweet tooth? I sure do.
Most days I find myself craving chocolate at least twice throughout the day. Because of my infinite love for chocolate, I have found myself trying to recreate my favorite “unhealthy” recipes into ones that are healthy and all-natural!

These bars did not actually start off as bars. They started as fat-balls but when I miscalculated some ingredients, they became a little too batter-like to do so!
What I thought was going to be a minor disaster turned into my favorite things I have created thus far!
These bars are not only chocolate-y as heck, but they are packed with so many healthy fats.

I stick to a pretty high fat, low carb diet and these babies fit the mold completely.
If you are looking for a chocolate-y snack that isn’t unhealthy than these bars will quickly become your lifesavers!

Ingredients

  • 3/4 cup oats
  • tbsp peanut butter
  • 1/4 cup cashews
  • 1/4 cup almonds
  • 2 tbsp coconut oil
  • 1 tbsp chia seeds
  • 1/4 cup coconut chips
  • 1/3 cup chocolate protein powder (I use garden of life)

    Additional Toppings
  • 1/3 cup coconut flakes
  • tbsp dark chocolate chips
  • 2 tsp coconut oil

Instructions

1. Add all of the ingredients together and blend in a food processor or blender. I use a ninja bullet.
2. Line a pan with parchment paper and place batter in pan.
3. Place pan in the freezer for half hour.
4. Heat the chocolate chips with the coconut oil and drizzle on top of bars then add coconut flakes.
I’m obsessed with these because they taste like a candy bar but are actually good for you! Part of the reason I love cooking so much is that it’s fun to show people that you can make healthy food taste even better than popular junk food.
What do you enjoy about cooking?
xx Lindsay
